B is for Busy

Today was a rather busy day for me. My ear is feeling a tad bit better, so I only had to take four aleeve as opposed to six so far.

However, I did get a package in the mail, thanks Ann! I got

Charmed Knits

and

Knit2Together

I think I might knit just about EVERYTHING in the Charmed Knits and quite a few things out of the Knit 2 Together.  I love when the mail person brings cool toys.

Today, I baked a loaf of bread.  Been awhile since I did that, so I figured why not.  It’s a rainy, cloudy, chilly day.  Might as well take advantage of the coolness.  Next up I baked a Devil’s Food Cake and made a creamy white frosting to top it with.

For dinner, we had an italian sausage dish.  You add diced tomatoes, balsamic vinegarette and onions, then serve over rotini pasta.  It was quite yummy.

See, I can cook, if I put my mind to it! LOL!  Not sure about tomorrow’s entree, I’ll think about that in the am.

I’m now off to knit on a “weasley sweater”.  It will look nothing like a weasley sweater due to my yarn choice, but I love the pattern, straight, simple and easy peasy.  The best kind of patterns.

I outdid myself!

I don’t cook that often (actually it’s probably best termed “rarely”…but, man, did I do good!  You can never go wrong with Red Beans and Rice!

I simmered my beans with pork sausage and onions and seasonings all day.  My rice is the old fashioned kind, one cup of rice to two cups of water ratio.  You bring to a boil, then cover and simmer for exactly 20 minutes.  Comes out fluffy every single time! (Okay, there was the time I didn’t put the lid on till it had boiled a little too long.) The cornbread was totally moist and totally yummy!  I’m not a creative cook, but when I do cook, it’s really good.  And one thing I excel at is “southern cooking”!

Now, I’m stuffed and can barely move.  P is wrestling the leftovers into the fridge as I type.  He’s in charge of the clean up detail.  Luckily for him, I’m a tidy cook, I wash as I go, so the only thing to clean up is the dinner dishes and what pots were leftover from the food.

As for tomorrow, it will be leftovers, yummy.  This whole dish is even better the next day after it’s heated up!

Oh god…I forgot, I left my beloved cast iron skillet with P…I must go rescue it!  He has no concept of how to take care of it!  Yipes. Whew, disaster averted.  I’m very picky about my cast iron skillet.  It’s taken me years to get it seasoned properly and part of the process was stuffing it into a wood burning fireplace for a few hours!  So, it’s perfect, and I’m always afraid he is going to try to wash it in the sink…bad…very bad.
